I Suffered for 26 Years with Eosinophilic Esophagitis (EoE) and Discovered Its Source in 12 Months

Here is an archive of my articles about my experience with the 6-food elimination diet, the elemental diet, the fruits and vegetables reintroduction diet, and my diet of eliminating preservatives, additives, food coloring, antibiotics, steroids, pesticides, and insecticides, and creating new recipes and foods.

Everyone's EoE experience, journey, and treatment is different. This is mine. After numerous food impaction episodes that began in 1996, countless endoscopies and biopsies of my damaged esophagus, abnormally high eosinophil counts, and prescribed treatments by three GI doctors, I solved the mystery of my eosinophilic esophagitis (EoE), a rare immune disease of the esophagus.


I have written about my EoE journey to give hope to others who may be suffering as I have. The following is an archive of my experience with the 6-food elimination diet (which did not reduce my eosinophil count of 100), the elemental diet (which healed my EoE and decreased my eosinophil count to ZERO ), the reintroduction of fruits and vegetables (which failed and elevated my eosinophil count), and finally, the diet I created, which I call the Miriam Diet, and which healed my EoE, my esophagus, and decreased my eosinophils to "up to ZERO."
